I made some amazing coconut cupcakes from Bon Appetit this afternoon. They were WONDERFUL. Almost like pound cake, they are moist and rich. For the recipe, click here. They are totally worth the effort. A few tips not mentioned in the original recipe…
=When spooning the batter into the cupcake tins, smooth it out with a butter knife or spatula. I didn’t do this, and they ended up rather lumpy looking, like biscuits. (But easily fixed with frosting =). )
=Chill the frosting slightly before piping on top of the cupcakes. When it gets warm it won’t hold shape as well.
=I refrigerated them before serving, and they were excellent. The frosting is better tasting when chilled, I think.

Love, love, love coconut cupcakes! And the one and only time I made a layer cake, I used my coconut cupcake recipe and it came out smashing.
