I love gyros.
I met them at a little MediterraneanĀ restaurant a couple years ago and have been in love ever since. Since I’d rather eat at home, I made them the other night on my mom’s birthday.
The first step for my gyros was to brown a pound of ground turkey with salt, pepper, oregano, and thyme. Once browned I added Chick Peas (Garbanzo Beans) and heated those up as well.
While the turkey is browning, cook your rice. I made brown rice, 2 cups of rice to 4 cups of water.

Next step- the Tzatziki sauce, aka cucumber sauce. I didn’t have a recipe for this, but googled it and found the traditional recipe. I didn’t take the picture, either =p Click Here for the Recipe

Warm your pita up- I like to do it on the stove (I don’t use microwaves for health reasons)- then add your toppings. In addition to the turkey and beans, I put tomatoes and cucumber sauce on mine, and I didn’t have any spinach at the time or that would have been on it as well! I like to put a little rice on my gyros, but it’s however you prefer. What is also really good is the regular gyros toppings, but on brown rice, sans pita.

Balsamic Blackberry Cucumber Salad
And sparking cider for me and the boys!
