Cucumber-Blackberry Balsamic Salad
This is good. Really good. I wanted a change in my regular cucumber salad, and blackberries were handy. Typical of me, I didn’t measure or write anything down. So, here is the pretty-much-it recipe. =)
What you will need:
Thinly Sliced Cucumbers (~3)
Thinly Sliced Onions (~1/2 a small onion)
Blackberries (~1 cup)
Feta Cheese (~3 Tablespoons)
Fresh Basil
Fresh Thyme
Balsamic Vinegar
Extra Virgin Olive Oil (EVOO)
Salt and Pepper
Mix your everything together but the blackberries and feta. As for how much balsamic vinegar and olive oil, it’s up to you. I like a lot of balsamic on mine, and about 1/2 as much EVOO. Add your S&P and herbs to taste. Gently mix the blackberries in, and let it sit for a few minutes so everything has a chance to meld. I like mine chilled. Sprinkle the feta cheese on right before you eat it, or else it gets drowned in the balsamic vinegar and loses it’s bite. My mom suggested the feta, and that was after I took the pictures so don’t bother looking for it! =)
This is a super easy, healthy, and delicious end-of-summer side dish.
