Chia Pets and Balmy Nights

I’m sitting here at the dining room table quietly, just enjoying the night. It’s one of those calm, balmy, hot nights. Drinking glass number two of a Mexican speciality: Lemonade with Chia Seeds. A different and refreshing combination. I found out they buy Chia Seeds by the kilo for ridiculously low prices here and am rather envious. Chia seeds are really good for you, and also happen to be the same Chia Seeds of the Chia Pet.

I have some homework to do for my morning class, and it’s sitting by my elbow patiently while I browse through tumblr and type away here on wordpress. Went to my morning class and we watched a movie for the first hour and a half, then worked on a few rough spots with my Spanish prepositions. In the afternoon I went out to lunch to “Gorditas Ricas” with my host mom. Gorditas are little pita-shaped stuffed tortillas (corn or flour). I tried a few different varieties of chicken, pork, and a zucchini cheese. Also, gordita is chubby woman. It’s the lighter, cuter, less-offensive way of says gorda. 

In my afternoon class I was supposed to give (another) summary of a book or movie. I chose Pride and Prejudice and absolutely butchered it. Couldn’t figure out which details to leave out and which to keep. I am horrible with summaries. After my murder of Jane Austen’s classic we went to a little Ice Cream Shop for paletas, or popsicles. Not just any popsicle either. Fresh, exotic flavors and made with real fruit. I had one of guayaba that was perfect for the hot afternoon.

I came home from class and ran (literally, put the tennies on and finally did some exercising this week!) to the alsuper to buy lettuce for dinner. I love being able to walk for groceries. I wish I could walk everywhere. I would love to find a house this fall close enough to the college that I can walk! Ate a big salad for dinner, then helped my host mom with some work around the house.

My host dad just came home, and plopped a jug of fresh-squeezed orange juice down on the table, asking if I wanted any. They sell fresh-squeezed, unpasteurized OG in the super markets here. I am going to miss Mexican food when I come back! The air conditioning is on, and I’m wearing my cotton shorts and a tank top. I suppose I should do my homework now… Good thing there’s not much! I am going to make some Chia-Seed oatmeal for breakfast. My oatmeal-hero, Kath, at Kath Eats, uses Chia Seeds in her oatmeal and I have been wanting to try it ever since I saw it.

  1. Liv…..you’re such a Foodie!….I love it. Oh, how I’d love a glass of real fresh squeezed OJ! And those fresh fruit popcicles sound so good! Have a blessed weekend celebrating the Resurrection of our awesome Savior! GJ
